This Madrid landmark (since 1839) is an elegant treasure trove of takeaway gourmet tapas downstairs and six dining areas upstairs that are the upmarket preserve of traditional Madrid dishes with an occasional hint of French influence. House specialities include cocido a la madrileña (meat-and-chickpea stew; €36.50), pheasant and wild duck in an orange perfume. The quality and service are unimpeachable.
