For the uninitiated, salo is the cured pig fat (lard) that Ukrainians love to slip down with vodka and use an an ingredient in national dishes. This 'museum' is more a gallery in a restaurant where you can pay homage to salo at the salo monument and wonder at pieces of modern art and sculpture made of the stuff, some of which can be ordered to eat.
